This recipe is fabulous for 3 reasons: easy to make, super healthy, and really good! I first saw this recipe in a fresh, fast, and easy ingredients cookbook. I was enticed by how easy it was to make, and didn't require me going to the store and buying a dozen different ingredients, most of them I already had. Since this recipe calls for fresh ingredients for the pasta sauce, there are little to no calories in the sauce...and it is sooooo good! I love it! Perfect weeknight meal!
Here's what you'll need:
Serves 2
-10-12 large sea scallops
-1 clove garlic, or 1.5 teaspoons of minced garlic (why get your hands all stinky from slicing fresh garlic?)
-1/2 cup dry white wine (you can always add a little more if you are making this for more people)
-1 large tomato, diced
-3 tablespoons capers
-2 tablespoons chopped basil
-Olive oil to cook scallops in
-cooked angel hair pasta
Let's get started!
1. Add some olive oil to a cooking pan over medium-high heat. Once heated, add scallops. Cook 3 minutes, turn them over, and cook an additional 3 minutes on the other side. Remove from pan, keep warm.
2. Add garlic to the already heated pan, add the 1/2 cup white wine, and next 4 ingredients to pan. Cook until warm, about 2-3 minutes.
3. Drizzle angle hair pasta with about a tablespoon(or less) of olive oil. Add pasta to plates
4. Spoon mixture over scallops and pasta
